So.. I've done lots of research about foods that are really healthy and can help with weight loss. I
came to know about Quinoa last year, and really wanted to try recipes with it. If you don't know about Quinoa, from what I've read it's a protein filled grain that's an alternative to rice (great for those who are vegan or are allergic to gluten).
I have tried to cook Quinoa from scratch, but it's so messy and long winded! I have found some really good packaged versions that have already been cooked! You can just pop them into the microwave to warm up.
For this meal I literally picked up random salad items and cut them up to mix in with the Quinoa. Quinoa is quite bitter and so does need seasoning/flavour. For this specific meal I added salt, pepper and squeeze of lemon. To be honest for me that isn't enough for flavouring, next time I will try and find some other seasoning.
I also use tuna from John West that has flavouring. I like the lemon and the basil ones. When meal prepping I only add the tuna when I eat it, so that it tastes more fresh. The infusion pots are ready to eat and don't need mixing/draining, so perfect for lunches.
So yea that's one easy meal prep meal that is healthy, full of protein, and great for weight loss. You can add so many different vegetables to make it interesting. Whenever I find meals that are easy, cheap and healthy I'll try and share on the blog :)
